Cockles in Vinegar (Leigh-on-sea) 150g
Cockles (Cerastoderma edule) are small, edible bivalves found in the intertidal zone. They feed in shallow water and burrow themselves into the sandy ground when the tide is out.
Traditionally, cockles were sold alongside winkles and whelks and have been a popular snack at British seaside destinations for decades. In fact, they were even sold by pint outside London pubs when scales were not available.
The season to catch these tasty creatures runs from June to September/October. Once caught, they are taken to the factory, where they are cooked, washed, and packed for local, national, and international sale.
